Crappie Fish Fry Recipe

One of the greatest benefits of living lakeside is the surplus of fresh fish found in Geist Reservoir that can be caught, filleted, and eaten. A fish consumption advisory provided by DNR officers can be found here. The most popular local water subsisting delicacy is the Crappie. White and Black Crappie are said to taste the same, however the Black has a slightly firmer texture. Regardless of which type of Crappie you end up with the crisp and flaky end product is sure impress. Here is a highly sought after Fish Fry recipe:

Ingredients:

1 lb Crappie Fillets cut into strips, 12 ounces of full bodied beer, 1 1/2 cups of cornflour, 1 teaspoon salt, 1 teaspoon paprika, 1/2 teaspoon cayenne pepper, 1 cup flour, and peanut or canola oil

Directions:

  1. Add beer, corn flour, salt, paprika, and cayenne to the bowl and whisk until you have light and frothy batter.
  2. Refrigerate mixture for a minimum of an hour but no more than five days.
  3. In a deep skillet, heat about 2 inches of oil to 375 degrees F.
  4. Dredge fillets in flour, shake off excess; then submerge them in the beer batter.
  5. Fry in oil until perfectly golden and drain on paper towels.
